“ Love this spot. Always went to Albany location but this is closer and has parking lot which is a plus. Smaller menu but has all the favorites. My husband and I both had Phó and it was the perfect dish for a cold night. Service was quick and owner was super nice. Cute place inside and modern. Will be back! ”
“ A friend and I visited Pho Vans for a Saturday night dinner adventure. It wasn't as busy as I would have expected for a Saturday but I had made a reservation anyway just in case. Other than the service being incredibly slow, I believe we waited 45 minutes just to get our appetizers, the servers were very kind and accommodating. The food when we did get it was very tasty indeed! We ordered many different things and didn't dislike a single thing. Everything was very fresh and well seasoned. I have to especially recommend the pork spring rolls and the tarro smoothie! Oh my goodness that smoothie! The ambience was also very nice and modern. I think it would be a great date spot. They wouldn't dream of kicking you out early to turn the table for the next sitting. Try this exciting spot and enjoy a delicious trip to Vietnam! ”

“ Second time at this location and the food was excellent both times. The beef broth is so flavorful in the pho. This time I ordered grilled salmon with ginger, perfect cooked and so tasty. Hubby has ordered yellow curry with chicken both times and raves about it. The portions are big and keep nice for warming for the next day's lunch. I am not giving 5 stars because the chairs are a bit uncomfortable and the atmosphere lent itself more to the prior establishment that was a cafe. Service was good and quick. We are fortunate not to have to travel 20 minutes to the original location anymore. ”

My favorite hot chilies on the table. I had the Bun fresh tofu rolls - huge!! And very very fresh! I have enough for lunch tomorrow. Owner gave me extra sauce to go. Trying the Pho Chay next time!! “ This is a welcome addition to the restaurants in Schenectady/Rotterdam. Pho Van's is also the second restaurant in the area created by the proprietors of Van's (307 Central Avenue, Albany). As its name implies, this restaurant focuses on pho (pronounced "fuh"), a Vietnamese rice noodle soup. I didn't go for the usual this time, but I did have appetizers to go. The first was Cha Gio Chien (Fried Pork & Shrimp Spring Rolls - 4 per order). The filling of the spring rolls is comprised of minced pork, shrimp, carrots, onions, and rice vermicelli which is then wrapped in rice paper and deep fried. The rolls are served with lettuce, mint, and cucumber. My order also came with quick pickled carrots and radish. The sauce is nuoc mam - fish sauce, water, sugar, and citrus. I think the best way to eat these spring rolls is to wrap one in a torn piece of lettuce with your fresh and pickled veg, dip it in sauce, devour. The second was Goi Dau Khuon (Tofu Salad). The menu describes it as "sliced fried tofu, cabbage, basil, carrots, scallions, and crushed peanuts served with nuoc mam chai sauce (vegetarian sauce)." Fried tofu might not sound appetizing but it is palatable. It has that satisfying texture of a French fry - crunchy outside/soft inside. If you are familiar with Japanese Agedashi Dofu, the preparation of the tofu will be familiar, just flatter. The fried tofu was served on a mound (think small hill) of finely shredded cabbage and various vegetables. Interestingly, the peanuts were placed in a small container which were then placed inside the take-out box. Nice touch, if you happen to have a nut allergy or dislike peanuts. Also, to me, there's a hint of liquid smoke to the vegetarian nuoc mam chai...and a lot of dissolved sugar. Although these were ordered off the appetizer menu, about $10 and $12 dollars respectively, the portion sizes were big. In fact, I could only eat one appetizer for dinner. Both dishes were done very well. GBD (golden, brown, delicious) doneness for the fried items, not sodden with oil. The fresh and pickled vegetables served to lighten the meal and the nuoc mam gave bright, sweet acidity to the dishes. Vietnamese food, c'mon, Anthony Bourdain craved this stuff. I hope this restaurant stays around a while. ”
“ As a fan of Vietnamese Pho soup I always had to drive to Colonie or Albany to find a restaurant that serves this delicious dish. Well that all changed when I visited Pho Van's in Rotterdam. Located right on Hamburg St with plenty of parking. Only caveat is that right now they're cash only. That will change, but it's good to know ahead of time. The staff is super friendly and the interior of the restaurant was clean and charming. We ordered our food to go, and it was beautifully packaged. The noodles were kept separate from the broth so as not to get mushy. The portions were very generous and the price was reasonable. Now down to the food! I ordered my soup with little beef meatballs, and my son ordered the plain noodle. As an appetizer we ordered the egg rolls. The soup was HEAVENLY!!!!! The broth was aromatic and not overpowering. Included was a small container or a shiracha and one of a sweeter flavoring. You can adjust the flavor to suit your tastes. As I mentioned they kept everything separate so I could add as many or few noodles as I wanted. The vegetables were fresh and nicely crisp. The meatballs were a great compliment to the dish as well. The egg rolls were a taste sensation! You get four small egg rolls that are pack with flavor. There is a dipping sauce to accompany them, but they honestly didn't need anything else. The veggies that accompanied them were nicely cut and delicious! If you are on the fence about Vietnamese cuisine jump off it and head to Pho Van, you won't be disappointed. ”
